Roasted Chicken

Dr. Terry has asked me to be a part of the newest edition of his newsletter, that of health and wellness as it would pertain to healthy eating. I am a professionally trained chef with my emphasis on healthy cooking. I will be providing monthly recipes that you can make at home. This month I would like to talk about bringing your lunch to work or packing your kids lunches vs. buying pre packaged processed foods, (i.e. lunch meats) or fast food or having your children buy their lunches in the school cafeteria and instead prepare your own lunches and snacks. Many times it is less expensive to “brown bag it” than to buy your lunch out and it is definitely healthier! There is so much hidden fat, salt and calories in pre packaged and restaurant food, fast food restaurants as well as non fast food restaurants!

Here is a quick and easy way to prepare chicken. After the chicken is cooked, you can cut it up and put it in a salad or make a chicken salad sandwich (on whole grain bread!) by adding some low fat mayo, chopped celery and some chopped apple (any kind you like!).


1 Whole (2 split) chicken breast, bone in skin on
Olive Oil
Kosher Salt
Freshly Ground Pepper

Preheat oven to 350 degrees.

Place the chicken breast on a sheet pan and rub the skin with olive oil. Sprinkle generously with salt and pepper. Roast for 35 to 40 minutes, until cooked through. When cool enough to handle, remove the meat from the bones, discard the skin, and shred or dice the chicken meat.

You can cook several pieces at once. It will keep for 3 days in your refrigerator.
